How to zip with an exclude
I found this picky because to exlcude a folder you must specify the * to say exlcude everything in that folder which is the only thing that worked for me

example:
zip -r name.zip * -x "backup/*" -x "backupLocal/*"

How to add to zip
zip -ur name.zip  adaginc.sql

u flag is to update
r flag is to compress
